The original hot oil bar pie
Thin-crust, Connecticut-style pizza finished with our signature hot oil. Local beer, wine, a patio and the game on.

What’s the hot oil?
A spicy, fragrant oil, spooned over the pie so it melts into the thin crust. It’s what put Colony on the map, and it’s still the first thing to order.
Served with a roasted hot cherry pepper.
